It all starts with a very special grape. A sweet, white grape that is grown in the rolling hills and soils of Emilia-Romagna, Italy. The grape is pressed slowly and gently to extract a beautiful must. With no added ingredients, the must is cooked on open flame and set aside to cool over winter. Come spring, the must is decanted and placed inside of specifically selected casks (wood barrels) where it naturally ages to perfection. The result is a beautiful balsamic with a soft, penetrating fragrance, pleasant acidity and characteristic bouquet in reflection to the type of wood in which it was prepared.
The 8-year and 10-year balsamic vinegar by Goccia (shown above) is our newest obsession and is best enjoyed drizzled over cooked meats and fish, raw vegetables, fruits, salads, rice, and cheese.
